Orange & Sesame Biscuits
These orange–sesame biscuits will fill your kitchen with the aroma of a Greek island bakery. Simple to make and bursting with fragrant flavour, they’re the perfect companion to your morning or afternoon coffee an everyday escape to the Mediterranean.
Ingredients
• 1 cup freshly squeezed orange juice
• 2 tsp baking powder
• 3 cups plain flour (plus extra if needed)
• 1 cup light olive oil
• ¾ cup sugar
•½ tsp baking soda
• Freshly grated nutmeg (to taste)
• ½ tsp cinnamon
• 1 tsp vanilla extract
• Sesame seeds (for coating)
Method
In a large bowl, combine the olive oil, sugar, cinnamon, vanilla, and nutmeg. Stir until well blended.
Add the baking soda to the freshly squeezed orange juice. Stir until the mixture becomes frothy.
Pour the frothy orange juice mixture into the oil mixture. Stir well to combine.
Add the flour and baking powder gradually, mixing until a soft, biscuit-like dough forms. (You may need a little more flour depending on the texture.)
Take small portions of dough and shape them into your desired biscuit shape. (Keep them small to bake evenly.)
Dip or roll each biscuit in sesame seeds to coat the outside.
Place the biscuits on a lined baking tray. Bake in a preheated oven at 160 °C for 20–25 minutes, or until they’re lightly golden.
Remove from the oven and allow to cool on a wire rack.
Tips
Do not overbake — they should be golden, not brown.•Store in an airtight container for several days
